Welcome to Oh Yum with Chef Anna Olson! In this video Chef Anna guides you on making these delicious classic chocolate chip cookies. Click on 'SHOW MORE' for baking directions. Ingredients for the chocolate chip cookies: ½ cup unsalted butter, at room temperature ½ cup packed light brown sugar ½ cup granulated sugar 1 large egg, at room temperature 1 tsp vanilla extract 1 ¼ cup all-purpose flour 1 Tbsp cornstarch ½ tsp baking soda ½ tsp salt 1 ½ cup chocolate chips 1 cup lightly toasted, coarsely chopped pecans (optional) Chocolate Chip Cookies Baking Directions: 1. Cream the butter with the brown sugar and granulated sugar together well. Beat in the egg and the vanilla. 2. In a separate bowl, sift the flour with the cornstarch, baking soda and salt. Add this to the butter mixture and stir until blended. Stir in the chocolate chips and pecans (if using). 3. Using a small ice cream scoop or a tablespoon, scoop spoonfuls of dough (about 2 Tbsp) shape them into a ball and place onto a parchment lined baking tray or a plate. Chill the scooped cookies for at least an hour, or once chilled, the cookies can be frozen for baking later. 4. Preheat the oven to 325ºF. Arrange the chilled scooped cookies onto parchment-lined baking trays, leaving 3 inches between the cookies. Bake for 15-18 minutes, until browned around the edges. Cool the cookies on the baking tray. If baking cookie dough that has been frozen, arrange the frozen cookies on the baking tray and let them thaw for 20 minutes at room temperature before baking as above. Let cool slightly and enjoy. The Best Chewy Chocolate Chip Cookies Servings: 12 INGREDIENTS ½ cup sugar ¾ cup brown sugar, packed 1 teaspoon salt ½ cup butter, melted 1 egg 1 teaspoon vanilla extract 1¼ cups all-purpose flour ½ teaspoon baking soda 4 ounces milk or semi-sweet chocolate chunks 4 ounces dark chocolate chunks (or your preference) PREPARATION Preheat oven to 350°F/180°C. In a large bowl, whisk together the sugars, salt, and butter until a paste has formed with no lumps. Whisk in the egg and vanilla, beating until light ribbons fall off the whisk. Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix too much. This will cause the gluten in the flour to toughen which will result in cakier cookies. Fold in the chocolate chunks evenly, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be. Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches of space between cookies and 2 inches of space from the edges of the pan so that the cookies can spread evenly. Bake for 12-15 minutes, or until the edges have started to barely brown. Cool completely, and enjoy! Borwn 1 cup of butter on low heat, you'll see the butter get brown as you tend to it with a spoon. Wet: 1/4 c brown sugar, 1/4c. white sugar, 1 egg, 1 yolk, 1 tbsb of sour cream (or greek yogurt). Put in mixer. Mix. Add brown butter. Fold in Dry mix. Mix in 1 cup of mixed milk and dark chocolate chips. Put in the fridge for about 30mins - 1hour. Form some balls with your hand about 2inches thick. Flatten them out, put a tbsp of nutella in the middle and fold the bal over again. Place on parchment paper. Bake at 350 farenheit for 15mins or until desired texture is achieved. Shorter times for chewy gooey cookies. Full time for nice hard cookies. When done, cool them on a rack with some sea salt flakes on top. Enjoy with a tall glass of milk.

Pour 1 tbsp of Nutella one by one at equal distance on a flat plate lined with grease proof paper. Let it spread on its own. No need to shape it. 2. Keep it refrigerated for at least 30 minutes or till the Nutella is firm. 3. Heat the butter in a broad non-stick pan, mix well and cook on a medium flame for 4 to 5 minutes or till it turns light brown in colour and froth appears, while stirring continuously. 4. Transfer the mixture into a deep bowl and keep aside to cool for 5 to 7 minutes. 5. Combine the plain flour, baking soda, brown sugar and sugar in a deep bowl and mix well. Keep aside. 6. Put the egg, egg yolk, vanilla essence and curds in the butter mixture and mix gently using a spatula. 7. Add the plain flour mixture and chocolate and mix well with your hands. 8. Add the chocolate chips and mix well with your hands. 9. Cover with a cling wrap and refrigerate for 2 hours. 10. Divide the dough into 24 equal portions. 11. Take a portion of the dough, flatten a little to make a depression, put 1 tbsp of the chilled Nutella in the center and cover it from all the sides to form a ball and slightly flatten it. 12. Repeat step 11 to shape 23 more cookies. 13. Place 12 cookies on a baking tray and bake in a pre-heated oven at 180°C (360°F) for 10 to 12 minutes. 14. Sprinkle the sea salt evenly over each cookie and cool completely. 15. Repeat steps 10 and 11 to bake 12 more cookies in 1 more batch. Serve or store in an air-tight container.

This chocolate salted caramel tart is absolutely amazing. A buttery almond crust, gooey salted caramel and bittersweet chocolate ganache, all garnished with salted crystals. Chocolaty, rich and buttery, a perfect treat for any occasion. Ingredients: Makes about 6-8 servings Almond Chocolate Sweet Pastry 1 1/4 cups (160g) flour 1/4 cup (30g) ground almonds 1/4 cup (30g) unsweetened cocoa powder 1/4 cup (50g) sugar 1/4 tsp salt 1 stick (110 g) cold unsalted butter, cut into small (1/2-inch) cubes 1 tsp vanilla extract 1 egg 1-2 tbsp ice water Caramel 1 1/2 cups (300 g) sugar 1/2 cup (100g) water 1/2 cup (120 g) heavy cream 5 tbsp (70 g) unsalted butter 1 tsp salt Chocolate Ganache 1/2 cup (120 g) heavy cream 4 oz (120g) bittersweet chocolate, chopped Garnish sea salt crystals Directions 1. Prepare the sweet pastry. In a large bowl mix flour with ground almonds, cocoa powder, sugar and salt. 2. Incorporate butter to the flour mixture, using a pastry blender, a fork or a pastry processor, until crumbs are formed. Add the egg and vanilla extract and mix them in. Add water and incorporate into the dough. Wrap it with plastic, knead slowly to form a disc and refrigerate for at least 30 minutes or overnight. 3. On o floured surface or over the plastic wrap roll the dough to a circle with about 1 1/2 inches larger than your tart pan. Lift up the rolled dough and place it on a greased 9 inch tart pan. Remove the edges and refrigerate for 30 minutes before baking. 4. Prick the dough with a fork, line a parchment paper over the dough. Fill with dry beans, rice or pie weights. 5. Bake for 15 minutes in preheated 350 F (180C) oven. Remove the weights and the parchment paper. Return to oven for another 10 to 15 minutes. Allow to cool before removing from the tart pan. 6. Prepare the caramel. Place the sugar and water in a medium heavy bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a caramel color. 7. Remove the pan from the heat and add the cream. It will bubble a little bit. 8. Cook for about 1 or 2 minutes stirring constantly with a wooden spoon until smooth. Remove from heat and add butter and salt. Stir well until smooth. 9. Let the caramel cool slightly and pour over the chocolate crust. Refrigerate for about 4-5 hours. 10. Prepare the chocolate ganache. Heat the cream in a small saucepan. When the cream just begins to boil at the edges, remove from heat and pour over the chopped chocolate. Let sit one minute, then stir until smooth. 11. Pour the chocolate ganache over the caramel. Spread it evenly and refrigerate for another 2-3 hours before serving. Sprinkle with sea salt flakes and serve. Cook until lightly tan. Pour over milk chocolate and stir to combine. Pour into parchment paper-lined 6-inch pan; sprinkle with remaining salt and cocoa nibs, if desired. Cool at room temperature for at least 2 hours before cutting into small squares and serving. Makes 2 dozen. Today, we're making chocolate sea salt caramels. So, I'm starting with about three-quarters of a cup of sugar ran into a pot, three-quarters of a cup heavy cream, and about half a cup of corn syrup. I just use regular corn syrup. You can use light if you want to. It won't make it any healthier, but you can. Totally low-fat recipe. All I'm going to do is bring this to a boil on the stove, and we're just going to cook it until it's nice and thick. So, my caramel is a nice golden color, just lightly golden, almost tan. We don't want to go too dark or else our caramels are going to be too firm to cut into nice, chewy caramel bites. So, I'm going to add about four ounces of milk chocolate, a little bit of sea salt which is really going to bring out the flavor of the chocolate in the caramel. I'm just going to stir those together, and my chocolate is very quickly going to melt and start to set up here. As soon as your chocolate is melted, these caramels can go right into a six-inch pan lined with a little bit of parchment paper or a loaf pan. If you have a loaf pan, that's really great. Just kind of press it in and spread it out nice and evenly. I'm just going to top this off with one of my favorite things, which is cocoa nibs. Cocoa nibs are kind of unrefined cocoa beans, just a nice crunch and a little extra chocolate flavor. I'm just going to sprinkle those right over the top, and a little extra salt. I'm like a salt fiend. And, that's it. I'm going to let those set out in either room temperature for about an hour or in the fridge or freezer for about ten to fifteen minutes until they're firm enough to cut. So this is what my caramel looks like after I've taken it out of the pan after it's chilled for about an hour. It's nice and firm, ready to be cut. I've cut off one little edge already, but I'm just going to go ahead and do about a half-inch bar. I'm just going to keep cutting. If you find your knife is sticking at all, you can kind of spray it with just a little bit of PAM or a non-stick spray. These are really great gifts, actually. You can kind of box these up or bag these up and give them to friends. That's it. I'm going to go in the other direction and trim off my edges. That's your snack. That's your reward. Just nice little rectangles, and that's it. I'll do the rest of them, and then all you could do is either with a nice square of parchment paper you can wrap it and twist the edges so you have a little candy. Or you could just leave it like this with a little foil wrapper, and it's a beautiful candy ready to go. Just store these at room temperature and you can have them for about a month. That's how you make chocolate sea salt caramels.

My friend suggested that I try this recipe out, and I've been making these incredible cookies ever since. They are so rich, gooey, flavorful, and decadent. Every time I make them, people beg me for the recipe! -1/2 cup of butter (or 1 stick) -1 1/2 cups of flour -1 tsp of baking soda -1 pinch of salt -1/2 cup backed brown sugar -1/2 cup white sugar -1 egg -1 tsp of vanilla extract -1/2 cup semisweet chocolate chips -chocolate caramel candies (about 16) -sea salt for garnish 1. Melt butter in small saucepan. Bring to simmer, stirring constantly until browned. 2. Mix together flour, baking soda, and salt in a bowl. 3. In a separate bowl, combine the white and brown sugar. Add slightly warm butter and mix well. 4. Add the egg and vanilla extract to the butter and sugar mixture, whisk until creamy. 5. Add half the flour to the wet ingredients and combine. Add the second half of the flour mixture and combine until well incorporated. 6. Fold in chocolate chips. Let dough chill in the refrigerator for about an hour. 7. Preheat oven to 350 degrees and roll dough into 32 balls. Place chocolate caramel candy into the center of one ball, and use a second ball of dough to help cover the candy. 8. Place 2-3 inches apart on a parchment lined baking sheet and bake for 9-12 min or until slightly golden. 9. Right when cookies come out of the oven, sprinkle with sea salt. 10. Enjoy!

How to make Salted Caramel Cookies Tutorial Oh so yummy! Thanks for watching! Recipe: Preheat oven to 350 degrees. Melt 2 sticks butter (1 cup) in small saucepan over medium heat. Once the butter starts to foam begin whisking constantly. When butter turn brown and you start to see little brown bits at the bottom of pan, remove form heat and pour into your mixing bowl. Let cool. 1 - 1/4 cups packed dark brown sugar 1/4 cup sugar 1 egg 1 egg yolk 1 tablespoon vanilla 2 - 1/4 cups all purpose flour 2 tablespoons instant coffee granules 1 teaspoon baking soda 1/2 teaspoon salt 1 cup caramel bits 3/4 cup chocolate pieces coarse sea salt for sprinkling Whisk together flour, coffee, baking soda, and salt in a bowl, set aside. With an electric mixer, beat the butter and sugars until well combined, about 3 minutes. Add the egg and egg yolk, vanilla until well combined. Add dry ingredients and mix on low speed until combined. Add the caramels and chocolate chips, stir until combined. On a cookie sheet lined with parchment paper or lightly sprayed with cooking spray, drop dough by the teaspoon. Bake at 350 for 10 minutes or until edges start to turn golden brown. The recipe says two eggs but I have revised it and only one egg in the recipe now since this video was posted. I find it makes a better dough and the cookies are not quite as flat. Find the full recipe on the website. Adding a sprinkle of Fleur de sel (French sea salt) puts these cookies over the top and will impress everyone who eats them.
